Cheesy potato skins are crispy, savory appetizers filled with melted cheese, topped with bacon, peppers, green onions, perfect for parties or casual gatherings.

Ingredients

  • 4 large baking potatoes
  • oil
  • 1/4 lb Velveeta pasteurized process cheese spread, cubed
  • 2 Tbsp chopped red or green pepper
  • 2 slices Oscar Mayer bacon, crisply cooked and crumbled
  • 1 Tbsp green onion slices
  • sour cream

Instructions

  1. Cut baked potatoes in half lengthwise; scoop out centers, leaving a 1/4-inch shell.
  2. Cut shells in half crosswise.
  3. Fry in deep hot oil at 375°F for 2 to 3 minutes or until golden brown; drain.
  4. Place fried shells on a cookie sheet.
  5. Top with process cheese spread; broil until cheese begins to melt.
  6. Add chopped red or green pepper, crumbled bacon, and green onion slices on top.
  7. Serve with sour cream.
