Ingredients

  • 10 oz. cream cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 9-inch pastry shell
  • 1 1/4 cups canned or cooked pumpkin
  • 1/2 teaspoon nutmeg
  • 1/2 cup sugar
  • 1 1/4 teaspoons cinnamon
  • 1 cup evaporated milk
  • 1/4 teaspoon ginger
  • 2 eggs

Instructions

  1. Combine softened cream cheese, sugar, vanilla, and one egg, mixing until well blended.
  2. Spread the cream cheese mixture onto the bottom of the pastry shell.
  3. In a separate bowl, combine canned pumpkin, nutmeg, sugar, cinnamon, ginger, evaporated milk, and the beaten eggs; mix well.
  4. Pour the pumpkin mixture over the cream cheese layer in the pastry shell.
  5. Bake at 350°F for one hour or until set.
  6. Remove from oven and let cool.
  7. Brush the top with maple syrup and garnish with crushed nuts or Cool Whip before serving.
