Ingredients

  • 1 pkg lemon jello
  • 1 cup boiling water
  • 1 (6 oz) can frozen orange juice
  • 1 (8 oz) cream cheese, room temperature
  • 1 cup fresh or frozen coconut
  • 1 cup grated carrots
  • 1 med can crushed pineapple

Instructions

  1. Dissolve the lemon jello in boiling water.
  2. Combine the orange juice and cream cheese thoroughly.
  3. Slowly add the orange juice and cream cheese mixture to the jello mixture, stirring well.
  4. Add the coconut, grated carrots, and crushed pineapple to the mixture.
  5. Beat until smooth.
  6. Pour the mixture into a mold.
  7. Chill until firm before serving.
