Ingredients

  • 1 1/2 cups milk
  • 1/2 cup yellow cornmeal
  • 2 tablespoons butter or oleo
  • 4 ounces aged Cheddar cheese shredded
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • chopped jalapeno or red pepper flakes
  • 1 large egg beaten

Instructions

  1. Stir 1 cup of milk into the cornmeal in a saucepan; cook, stirring, over medium heat until it reaches the consistency of thickened mush.
  2. Remove from heat; stir in remaining milk, 1 tablespoon butter, shredded cheddar cheese, baking powder, salt, and chopped jalapeno or red pepper flakes.
  3. Stir until the cheese melts and blends well with the mixture.
  4. Stir in the beaten egg.
  5. Spoon the mixture into a well-greased 1-quart casserole dish.
  6. Bake in a preheated 325°F oven for 45 minutes.
  7. Top with the remaining butter before serving.
  8. Serve hot as a main dish.
