Ingredients

  • 6 cups sliced yellow squash
  • 4 to 6 chopped green onions
  • 1/2 cup dairy sour cream
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded Swiss cheese
  • 1 cup shredded Cheddar cheese
  • salt and pepper
  • 4 tablespoons butter

Instructions

  1. In a large skillet, sauté sliced yellow squash and chopped green onions in butter for 15 minutes, or until tender; remove from heat.
  2. Sprinkle lightly with salt and pepper, if desired.
  3. Combine egg and sour cream; stir in half of the cooked bacon.
  4. Add the egg and sour cream mixture to the squash mixture and blend.
  5. Spoon half of the squash mixture into a buttered 1 1/2-quart baking dish.
  6. Sprinkle Swiss cheese over the top; spoon remaining squash mixture over the cheese.
  7. Sprinkle Cheddar cheese and remaining bacon on top.
  8. Bake in a preheated 350°F oven for 20 minutes or until bubbly.
