Ingredients

  • 10 oz. package of mixed vegetables, cooked
  • 1 cup chopped celery
  • 1/3 cup chopped onion
  • 1 cup mayonnaise
  • 1/2 cup sharp Cheddar cheese, grated
  • dash of salt
  • dash of pepper

Instructions

  1. Saute chopped celery and onion in a bit of oil until tender.
  2. Combine cooked mixed vegetables, sautéed celery and onion, mayonnaise, and grated sharp Cheddar cheese. Season with salt and pepper.
  3. Pour the mixture into a 2-quart casserole dish.
  4. Combine crushed cheese crackers and melted margarine to make topping.
  5. Stir in 1/2 cup grated Cheddar cheese into the cracker mixture.
  6. Spread the cracker mixture evenly over the vegetable mixture in the casserole.
  7. Bake in a 300°F oven for 30 to 40 minutes until bubbly and golden.
