Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup almonds, chopped
  • 1-10 oz jar maraschino cherries, drained and chopped
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, cream together the sugar, softened butter, and eggs until fluffy.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
  4. Gradually blend the dry mixture into the creamed mixture with the buttermilk.
  5. Stir in the chopped almonds, chopped maraschino cherries, and almond extract.
  6. Pour the batter into a greased and floured 9 x 5 x 3 inch loaf pan.
  7. Bake for 55 to 60 minutes, testing for doneness with a toothpick.
  8. Remove from the pan and cool on a wire rack.
