Ingredients

  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup sugar
  • 1 (8 oz) package cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 1 cup whipped cream

Instructions

  1. Heat oven to 275°F (135°C).
  2. Cover a baking sheet with heavy brown paper.
  3. Beat egg whites and cream of tartar until foamy.
  4. Gradually beat in 1/4 cup sugar, one tablespoon at a time, until stiff and glossy.
  5. Spoon the meringue mixture into 5-inch circles on the prepared baking sheet.
  6. Use the back of a spoon to make an indentation in the center of each meringue.
  7. Bake for 1 1/2 hours.
  8. Turn off the oven and leave the meringues inside for another hour.
  9. Remove from oven and allow to cool completely away from drafts.
  10. Fill with the cream cheese mixture and whipped cream before serving.
