Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup butter or oleo, softened
  • 1/2 cup shortening
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 4 eggs
  • 3 cups all-purpose flour
  • 1 (21 oz.) can cherry pie filling
  • 2 teaspoons lemon rind, grated

Instructions

  1. Preheat oven to 350°F and generously grease a jelly roll pan or two 9-inch square pans.
  2. In a large mixing bowl, blend sugar, butter, shortening, baking powder, vanilla, almond extract, and eggs on low speed, scraping the bowl constantly.
  3. Beat on high speed for 3 minutes.
  4. Stir in the all-purpose flour.
  5. Spread two-thirds of the batter in the prepared pan(s).
  6. Spread the cherry pie filling evenly over the batter.
  7. Sprinkle grated lemon rind over the cherries.
  8. Drop the remaining batter by tablespoonfuls onto the pie filling.
  9. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
  10. Drizzle with glaze before serving.
