Cherry Chicken combines tender browned chicken with a sweet-tart cherry sauce, infused with warm spices and citrus, perfect for comforting family dinners or special occasions.

Ingredients

  • 1 broiler-fryer, cut up
  • margarine for browning
  • 1 (21 oz.) can cherry pie filling
  • 1/2 cup dry white wine
  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon allspice

Instructions

  1. In a skillet, brown the chicken in margarine for 10 minutes on each side.
  2. Season the chicken with a little salt and pepper.
  3. Drain off excess margarine.
  4. Combine cherry pie filling, white wine, orange juice, brown sugar, salt, and spices in a bowl.
  5. Pour the cherry sauce mixture over the browned chicken.
  6. Cover and simmer for 20 to 25 minutes or until the chicken is tender.
