Ingredients

  • 1 cup sifted flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons shortening
  • 3 tablespoons skim milk
  • 3 teaspoons Fasweet
  • 1 egg, beaten
  • 2 cups water-packed sour cherries with juice

Instructions

  1. Combine flour, baking powder, and salt in a large mixing bowl.
  2. Cut in shortening until the mixture resembles cornmeal.
  3. Combine milk, 1 teaspoon of Fasweet, and the beaten egg.
  4. Add the milk mixture to the dry ingredients, stirring only until just dampened.
  5. Sweeten the cherries with the remaining Fasweet.
  6. Place the cherries in a 1-quart casserole dish and sprinkle with tapioca.
  7. Spoon the batter over the cherries.
  8. Bake in a moderate oven (350°F) for 30 to 40 minutes or until the top is golden brown.
