Cherry Crunch Cookies

Ingredients

  • 3/4 c. margarine, softened
  • 1 c. sugar
  • 2 eggs
  • 2 Tbsp. milk
  • 1 tsp. vanilla
  • 2 1/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. chopped pecans
  • 1 c. chopped dates
  • 1/3 c. chopped maraschino cherries
  • 1 3/4 c. finely crushed cornflakes

Instructions

  1. In a mixing bowl, cream margarine and sugar.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add milk and vanilla; mix well.
  4. Combine the flour, baking powder, salt and baking soda; add to creamed mixture.
  5. Stir in the pecans, dates and chopped cherries.
  6. Cover and refrigerate for 30 minutes. Shape dough into 1-inch balls; roll in cornflakes.
  7. Place 2-inches apart on ungreased baking sheets; press a cherry half into center of each.
  8. Bake at 350° for 14 to 15 minutes or until golden brown. Remove to wire racks to cool.
  9. Yield:
  10. 5 1/2 dozen.
