Cherry Fig Bars

Ingredients

  • 2/3 c. all-purpose flour
  • 1/4 c. sugar
  • 1/4 c. chopped pecans
  • 1 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1 c. fig preserves
  • dash of salt
  • 2 eggs, lightly beaten
  • vegetable cooking spray

Instructions

  1. Combine first 7 ingredients in a bowl; stir well.
  2. Add eggs; stir until dry ingredients are moistened (batter will be slightly thick).
  3. Spread into a 9-inch square baking pan coated well with cooking spray.
  4. Bake at 350° for 25 minutes or until a wooden pick inserted in the center comes out clean.
  5. Cool in pan for 10 minutes; cut into bars about 2 inches across.
  6. Bake about 12 to 15 minutes or until browned.
  7. (The cookies won't be crisp unless they are browned.)
  8. Yields 44 cookies.
