Ingredients

  • 1 can sour cherries, drain and reserve juice
  • 4 Tbsp. cornstarch
  • 1/2 c. water
  • 1 pkg. cherry Jell-O
  • 1 1/2 c. sugar
  • 3 bananas
  • 1 small can crushed pineapple, drain and reserve juice
  • 1 c. pecans, chopped
  • 2 pie shells, baked
  • Cool Whip or whipped cream

Instructions

  1. Add cornstarch to the reserved cherry and pineapple juices with water.
  2. Cook on medium heat until thick and clear, about 10 to 15 minutes, stirring constantly.
  3. Remove from heat and add cherry Jell‑O, stirring until dissolved.
  4. Stir in sugar, then add cherries and pineapple; set aside to cool or refrigerate for 5 minutes.
  5. When slightly set, fold in bananas and pecans.
  6. Pour the mixture into the two baked pie shells and chill several hours.
  7. Top with Cool Whip or whipped cream before serving.
