Ingredients

  • 3 chicken breasts, skinned and boned
  • 1/2 cup milk
  • 1 cup flour
  • 1 teaspoon crushed thyme
  • 1/2 teaspoon ground black pepper
  • salt to taste
  • 1 can (16 oz.) tart cherries
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon prepared yellow mustard

Instructions

  1. Combine flour, thyme, black pepper, and salt in a shallow dish.
  2. Dip chicken pieces in milk, then coat evenly with the flour mixture.
  3. Set coated chicken aside and prepare the cherry glaze.
  4. In a saucepan, combine tart cherries, brown sugar, granulated sugar, and yellow mustard.
  5. Cook over medium heat until the sauce thickens slightly and flavors meld.
  6. Cook the coated chicken in a skillet until golden brown and cooked through.
  7. Serve the chicken glazed with the cherry sauce.
