Cherry Mash Cheesecake

Ingredients

  • 2 cups chocolate wafers, crushed
  • 1/2 cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 3 eggs
  • 1/2 cup sour cream
  • 3 teaspoons vanilla extract
  • 1 1/2 cups mini chocolate chips
  • 1 1/2 cups maraschino cherries, chopped
  • 1 cup peanuts, chopped

Instructions

  1. In a small bowl, combine the crushed chocolate wafers and melted butter; mix well.
  2. Press onto the bottom of a greased 9-inch springform pan.
  3. Bake at 350 degrees Fahrenheit for 10 minutes.
  4. Cool on a wire rack.
  5. In a large mixing bowl, beat cream cheese, sugar and flour until smooth.
  6. Add eggs, sour cream and vanilla; beat on low speed just until combined.
  7. Stir in chocolate chips, maraschino cherries, and chopped peanuts.
  8. Pour into crust.
  9. Bake at 325 degrees Fahrenheit for 1 hour or until center is almost set.
  10. Cool on a wire rack for 10 minutes.
  11. Carefully run a knife around the edge of spring form pan to loosen.
  12. Cool for 1 hour longer.
  13. Refrigerate overnight.
  14. Remove side of pan.
  15. Refrigerate any leftovers.
