Cherry Mini-Cheese Cakes

Delightful mini cheesecakes with a cherry topping, featuring creamy texture and vanilla wafers for crunch, perfect for parties or special occasions.

Ingredients

  • 2 (8 oz.) pkg. cream cheese
  • 2 eggs
  • 3/4 c. sugar
  • whipped cream
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • small vanilla wafers

Instructions

  1. Beat all ingredients except wafers together until light and fluffy.
  2. Crush a few vanilla wafers very fine.
  3. Butter small muffin pans generously and dust with wafer crumbs.
  4. Place a vanilla wafer in the bottom of each cup.
  5. Fill cups three-quarters full with the cream cheese mixture.
  6. Bake for 15 to 20 minutes or until lightly brown at 375°F; cool.
  7. Top each mini-cheesecake with 1 tablespoon of cherry pie filling, then add whipped cream.
