- Beat all ingredients except wafers together until light and fluffy.
- Crush a few vanilla wafers very fine.
- Butter small muffin pans generously and dust with wafer crumbs.
- Place a vanilla wafer in the bottom of each cup.
- Fill cups three-quarters full with the cream cheese mixture.
- Bake for 15 to 20 minutes or until lightly brown at 375°F; cool.
- Top each mini-cheesecake with 1 tablespoon of cherry pie filling, then add whipped cream.
