Cherry Pecan Cake

Ingredients

  • 1 lb red candied cherries
  • 4 c chopped pecans
  • 3 1/4 c sifted flour
  • 1 c oleo
  • 3 c sugar
  • 1/2 tsp ground mace
  • 8 eggs
  • 1/3 c orange juice

Instructions

  1. Combine cherries, chopped pecans, and 1/4 cup of flour; set aside.
  2. Cream oleo, 2 cups of sugar, and mace until light and fluffy.
  3. Add egg yolks, 2 at a time, beating well after each addition.
  4. Alternately add remaining flour and orange juice to the creamed mixture, then add the cherry mixture and mix.
  5. Beat egg whites until foamy.
  6. Gradually add remaining sugar and beat until stiff, glossy peaks form.
  7. Fold egg whites into the batter gently.
