Ingredients

  • 1/3 cup soft shortening
  • 1 cup sugar
  • 1 cup molasses
  • 1/2 cup unbeaten eggs (4 eggs)
  • 1/4 teaspoon soda
  • 1/4 teaspoon salt
  • 1 1/2 cups shredded coconut
  • 1 3/4 cups sifted Gold Medal flour

Instructions

  1. Mix together the shortening, sugar, and molasses.
  2. Beat in the eggs very well.
  3. Stir in the remaining ingredients until blended.
  4. Line a jelly roll pan (15 x 10 x 1-inch) with paper, then grease the paper well.
  5. Pour the batter into the prepared pan.
  6. Bake 30 to 35 minutes at 350°F.
  7. Immediately turn the pan onto a wire rack.
  8. Remove the paper from the bars.
  9. Turn the bars right side up and cool.
  10. Cut into 1 x 2-inch bars.
