Ingredients

  • 1/3 cup shortening
  • 1 tablespoon sugar
  • 1 egg
  • 1 1/4 cups milk
  • 1 cup flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 cup cornmeal

Instructions

  1. Cream shortening and sugar together.
  2. Add egg and milk, and mix well.
  3. Combine flour with salt and baking powder.
  4. Add flour mixture to the wet ingredients and stir.
  5. Stir in cornmeal, mixing only enough to combine.
  6. Fill greased muffin pan 2/3 full with batter.
  7. Bake in a preheated 425°F oven for 25 minutes.
