Ingredients

  • 1 medium chicken
  • 1 Tbsp. oil
  • 1/2 c. vinegar
  • 3 medium potatoes, cubed
  • 1/2 c. soy sauce
  • 1/4 clove garlic
  • 1 c. water

Instructions

  1. Cut up the chicken and garlic.
  2. Brown the chicken and garlic in oil in a pot.
  3. Add soy sauce, vinegar, water, and potatoes to the pot.
  4. Stir to keep from sticking.
  5. Cook until the dish has a very light gravy and the chicken is done, about 1 hour.
  6. Serve over rice.

Tips & Substitutions

For a richer flavor, marinate the chicken in the soy sauce and vinegar mixture for at least 30 minutes before cooking. You can substitute the medium potatoes with sweet potatoes for a different taste. If you prefer a thicker sauce, remove the chicken once cooked, and reduce the sauce over medium heat until desired consistency is reached, similar to Tona'S Arroz Con Pollo.

Serving Suggestions

Serve Chicken Adobo over steamed rice to soak up the savory sauce. It pairs beautifully with a side of sautéed greens or a light salad for balance. Consider serving it alongside pickled vegetables for a refreshing contrast. This dish is also excellent for meal prep, making it easy to enjoy throughout the week.

Storage & Reheating

Leftover Chicken Adobo can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it in a saucepan over low heat, stirring occasionally. If the sauce has thickened too much, add a splash of water to loosen it. You can also microwave it, covered, for quick reheating.
