Ingredients

  • 2 c. cooked chicken, cubed
  • 1 medium red pepper, chopped
  • 1 medium onion, chopped
  • 2 Tbsp. salad oil
  • 1 (17 oz.) can cream-style corn
  • 1 (17 oz.) can whole kernel corn
  • 1 1/2 c. half and half
  • 2 Tbsp. chopped parsley
  • 3/4 tsp. salt
  • 1/2 tsp. thyme

Instructions

  1. Cook the chopped red pepper and onion in salad oil until tender.
  2. Add the cooked chicken, cream-style corn, whole kernel corn, half and half, salt, and thyme to the pot.
  3. Cook over low heat until the chowder is heated through.
  4. Serve hot with crusty French bread and a green salad.
