  • 1 Tbsp. coarsely chopped fresh basil
  • 1 c. fresh or canned tomato sauce
  • 2/3 c. port wine
  • 1/4 c. port wine
  • 1/8 tsp. hot dried red pepper flakes

Instructions

  1. Sprinkle chicken with freshly ground black pepper.
  2. Heat oil in a skillet large enough to hold chicken in one layer.
  3. Add chicken, skin side down, and brown on one side.
  4. Turn and brown on the other side, approximately 15 minutes total.
  5. Add chopped onion, garlic, parsley, basil, tomato sauce, and 2/3 cup of port wine.
  6. Cover and cook for 25 to 30 minutes.
  7. Add the remaining port wine.
  8. Sprinkle with red pepper flakes and stir to blend.
  9. Serve over a bed of white rice.
