Ingredients

  • 1 lb boneless chicken, skinned and cut into cubes
  • 1 Tbsp olive oil
  • 1 onion, cut into chunks
  • 1 (14 1/2 oz) can stewed tomatoes
  • 1 (6 oz) jar marinated artichoke hearts
  • 1/4 tsp crushed rosemary

Instructions

  1. In a skillet, brown the chicken in olive oil.
  2. Add the onion and cook for 2 minutes.
  3. Stir in the stewed tomatoes, marinade from artichoke hearts, and crushed rosemary.
  4. Cook over medium heat for 10 to 15 minutes or until thickened, stirring frequently.
  5. Stir in the artichoke hearts and heat through.
  6. Top with cheese and serve with rice.
  7. Garnish with chopped parsley, if desired.
