Ingredients

  • 8 cups chicken stock
  • 1 cup chopped chicken
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped pimento
  • 1/2 cup butter
  • 1/2 cup flour
  • salt to taste
  • pepper to taste

Instructions

  1. Combine chicken stock, chopped chicken, green pepper, and pimentos in a pot. Simmer for 30 minutes and season with salt and pepper.
  2. In a separate pan, melt butter over low heat. Add flour gradually, stirring constantly until lightly browned.
  3. Add a few tablespoons of hot soup to the flour mixture and blend into a smooth paste.
  4. Stir the paste into the simmering soup and continue stirring until the soup thickens.
  5. Serve the bisque garnished with croutons.
