Chicken Breast Ginger

- Spray a large skillet with Pam and heat over medium heat.
- Add chicken breasts and cook for 8 to 10 minutes until tender. Remove chicken from skillet and set aside.
- Drain peaches, reserving the juice, and cut into slices if needed.
- In a small bowl, combine water to make 1/2 cup, then stir in cornstarch, ginger, and salt.
- Add the cornstarch mixture to the skillet and cook until thick and bubbly.
- Cook and stir for 1 minute more.
- Gently stir in the peaches and water chestnuts.
- Heat through.
- Cook rice until hot and fluffy, then place on a serving dish.
- Arrange the cooked chicken on the rice and spoon the peach mixture on top.
