Chicken Breast Ginger

Juicy chicken breasts are glazed with ginger and topped with sweet peaches and water chestnuts, making a flavorful, colorful dish perfect for a quick, satisfying meal.

Ingredients

  • 4 boneless chicken breasts
  • 1 (8 oz.) can sliced peaches
  • 1 tsp. cornstarch
  • 1/2 can water chestnuts
  • 2 cups hot cooked rice
  • ginger to taste
  • salt to taste

Instructions

  1. Spray a large skillet with Pam and heat over medium heat.
  2. Add chicken breasts and cook for 8 to 10 minutes until tender. Remove chicken from skillet and set aside.
  3. Drain peaches, reserving the juice, and cut into slices if needed.
  4. In a small bowl, combine water to make 1/2 cup, then stir in cornstarch, ginger, and salt.
  5. Add the cornstarch mixture to the skillet and cook until thick and bubbly.
  6. Cook and stir for 1 minute more.
  7. Gently stir in the peaches and water chestnuts.
  8. Heat through.
  9. Cook rice until hot and fluffy, then place on a serving dish.
  10. Arrange the cooked chicken on the rice and spoon the peach mixture on top.
