Pineapple Walnut Stir-Fry

Ingredients

  • 20 oz. can chunk pineapple in syrup
  • boiling water
  • 1/2 cup walnuts
  • vegetable oil
  • 1 whole chicken breast, split, boned and sliced
  • 1 large clove garlic, pressed
  • 1 medium onion, sliced
  • 2 tablespoons chopped ginger root
  • 1/2 pound broccoli, cut in florets
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch

Instructions

  1. Drain pineapple, reserving the syrup.
  2. Pour boiling water over walnuts and let stand for 2 minutes.
  3. Drain the walnuts.
  4. Heat 2 tablespoons of vegetable oil in a wok or skillet.
  5. Stir-fry walnuts until browned, then remove and drain.
  6. Add oil as needed and stir-fry sliced chicken, pressed garlic, sliced onion, and chopped ginger until the chicken turns white.
  7. Remove the chicken mixture from the wok.
  8. Add broccoli florets to the wok and stir-fry until tender-crisp.
  9. Return the walnuts and chicken mixture to the wok.
  10. Add the pineapple chunks.
  11. Combine reserved pineapple syrup, soy sauce, and cornstarch to make the sauce.
  12. Stir the sauce into the pineapple mixture.
  13. Cook until the sauce boils and thickens.
  14. Serve hot with rice.
