Chicken Breast With Leeks

Juicy chicken breasts paired with tender leeks and aromatic tarragon create a flavorful, comforting dish perfect for a quick weeknight dinner or special occasion.

Ingredients

  • 2 Tbsp. butter
  • 2 leeks
  • 2 whole chicken breasts, skinned
  • salt to taste
  • pepper to taste
  • 2 Tbsp. white wine

Instructions

  1. Melt the butter in a microwave-safe dish by cooking on High for 45 seconds.
  2. Wash the leeks well and slice the white parts very thinly, discarding the tough green parts.
  3. Add the sliced leeks to the dish with the melted butter.
  4. Place the chicken breasts on top of the leeks.
  5. Pour the white wine around the chicken.
  6. Sprinkle the tarragon leaves on top of the chicken.
  7. Season with salt and pepper to taste.
  8. Microwave on High for 12 minutes, turning the dish at least once during cooking.
