- Melt the butter in a microwave-safe dish by cooking on High for 45 seconds.
- Wash the leeks well and slice the white parts very thinly, discarding the tough green parts.
- Add the sliced leeks to the dish with the melted butter.
- Place the chicken breasts on top of the leeks.
- Pour the white wine around the chicken.
- Sprinkle the tarragon leaves on top of the chicken.
- Season with salt and pepper to taste.
- Microwave on High for 12 minutes, turning the dish at least once during cooking.
