Creamy chicken and broccoli casserole features tender chicken, fresh or frozen broccoli, and a cheesy, crunchy topping, perfect for comforting family dinners or potlucks.

Ingredients

  • 2 packages frozen broccoli spears or 1 large head fresh broccoli, cut up
  • 6 boneless chicken breasts, cooked
  • 2 (10 3/4 oz.) cans cream of chicken soup
  • 1 cup mayonnaise
  • 2 cups grated cheese
  • Bread crumbs or browned cornflake crumbs

Instructions

  1. Cut up frozen broccoli or fresh broccoli into small bite-sized pieces and place in a buttered casserole dish.
  2. Cut up cooked chicken breasts and layer over the broccoli in the casserole dish.
  3. Mix the cream of chicken soup with mayonnaise until well combined.
  4. Spread the soup mixture evenly over the chicken and broccoli.
  5. Sprinkle grated cheese over the top of the casserole.
  6. Add bread crumbs or browned cornflake crumbs on top of the cheese.
  7. Bake at 375°F (190°C) for about 45 minutes until hot and bubbly.
