Ingredients

  • 9 slices day-old bread, cubed
  • 3 c. chicken broth
  • 4 c. cubed cooked chicken
  • 1/2 c. uncooked instant rice
  • 1/2 c. diced red peppers
  • 2 Tbsp. fresh parsley
  • 1-1/2 tsp. salt
  • 4 eggs, beaten

Instructions

  1. Combine the bread cubes and chicken broth in a large mixing bowl.
  2. Add the cooked chicken, instant rice, diced red peppers, parsley, and salt to the bread mixture. Mix well.
  3. Pour the mixture into a 13 x 9 x 2-inch baking dish.
  4. Pour the beaten eggs evenly over the top of the mixture.
  5. Bake uncovered at 324°F (160°C) for 1 hour, or until the dish is set and golden brown.
