Ingredients

  • 6 whole chicken breasts, boned and skinned, halved
  • 1/4 cup butter
  • 1/2 teaspoon paprika
  • 1 1/2 cups half and half
  • 1/2 cup raisins
  • 2 tablespoons candied mandarin peel
  • 3 tablespoons flour
  • 1/4 teaspoon salt

Instructions

  1. Soak raisins in mandarin juice.
  2. Melt butter in a skillet and brown the chicken breasts on both sides.
  3. Cook over low heat for 15 to 20 minutes until the chicken is done.
  4. Remove chicken from skillet, place on a serving platter, and keep warm.
  5. Pour off all but 3 tablespoons of pan drippings and stir in flour, paprika, salt, and pepper. Mix well.
  6. Add half and half and cook over low heat until the sauce is smooth and thickened.
  7. Stir in the raisin and mandarin juice mixture and heat through.
  8. Pour the sauce over the chicken.
  9. Serve over wild rice.
