- Place each chicken piece between sheets of waxed paper. Flatten with meat mallet.
- Place flattened breasts on board with flat side down.
- Put cheese and ham slices to corner of chicken, then roll up.
- Secure with toothpick.
- Roll in flour.
- Salt and pepper.
- Brown in 1/4 cup butter on all sides.
- Reduce heat to low and add wine and simmer 20 minutes, then place chicken in shallow baking dish.
- Melt 6 tablespoons butter in saucepan and add onion. Cook until tender.
- Blend salt, pepper and 1/4 cup flour.
- Add milk and light cream and stir until smooth.
- Add wine from skillet and cook over moderately low heat until sauce is thickened.
- Pour sauce over chicken.
- Bake uncovered in preheated oven at 350° for 20 minutes.
- Serve over rice adding sauce on top.
