Ingredients

  • 4 whole chicken breasts, boned
  • 4 slices boiled ham
  • 4 Swiss cheese slices
  • 1/2 c. flour
  • salt and pepper
  • 1/4 c. butter
  • 1 c. vermouth
  • 6 Tbsp. butter
  • 1/4 c. chopped onions
  • 1/2 tsp. salt
  • few grains pepper

Instructions

  1. Place each chicken piece between sheets of waxed paper. Flatten with meat mallet.
  2. Place flattened breasts on board with flat side down.
  3. Put cheese and ham slices to corner of chicken, then roll up.
  4. Secure with toothpick.
  5. Roll in flour.
  6. Salt and pepper.
  7. Brown in 1/4 cup butter on all sides.
  8. Reduce heat to low and add wine and simmer 20 minutes, then place chicken in shallow baking dish.
  9. Melt 6 tablespoons butter in saucepan and add onion. Cook until tender.
  10. Blend salt, pepper and 1/4 cup flour.
  11. Add milk and light cream and stir until smooth.
  12. Add wine from skillet and cook over moderately low heat until sauce is thickened.
  13. Pour sauce over chicken.
  14. Bake uncovered in preheated oven at 350° for 20 minutes.
  15. Serve over rice adding sauce on top.
