Ingredients

  • 1 broiler-fryer chicken, quartered
  • 1 small cabbage, cut into wedges
  • 1 medium onion, sliced into rings
  • 2 Tbsp water
  • 2 tsp granular chicken bouillon, divided
  • 1 tsp salt, divided
  • 1/2 tsp nutmeg, divided
  • 1/4 tsp pepper, divided

Instructions

  1. Arrange cabbage wedges in a deep 3-quart baking dish.
  2. Top with half the onion rings and water.
  3. Sprinkle with 1 teaspoon of bouillon, 1/2 teaspoon salt, 1/4 teaspoon nutmeg, and 1/8 teaspoon pepper.
  4. Place chicken quarters on top of the cabbage and onion layers.
  5. Add remaining onion rings around the chicken.
  6. Sprinkle with remaining bouillon, salt, nutmeg, and pepper.
  7. Cover and bake at 350°F for 45 minutes.
  8. Remove cover, increase oven temperature to 375°F, and bake for an additional 15 minutes or until the chicken is browned and easily pierced with a fork.
