Ingredients

  • 1/4 cup oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon celery seed
  • 1 or 2 bay leaves
  • 1 teaspoon oregano or basil
  • 3 pound chicken breast, cut up
  • 2 medium onions, sliced
  • 2 cloves garlic, minced
  • 1 (8 oz.) can tomato sauce
  • 1 large can tomatoes
  • 1/4 cup cooking Sauterne

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Add chicken pieces and brown slowly on all sides.
  3. Remove chicken from skillet and set aside.
  4. Cook onions and garlic in the skillet until tender.
  5. Combine remaining ingredients, except wine, in the skillet with the onions and garlic.
  6. Return the chicken to the skillet and simmer uncovered for 45 minutes.
  7. Stir in the wine and cook for an additional 20 minutes.
