Ingredients

  • 3 pounds cooked chicken, boned
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic salt
  • 1/2 large green pepper, chopped
  • 1 medium onion, chopped
  • 1 pound sharp cheddar cheese, grated
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 can rotel tomatoes, drained and chopped

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a 13 x 9-inch casserole dish, place a layer of half the cooked chicken, sprinkle with half the chili powder and garlic salt.
  3. Spread half of the cream of mushroom and cream of chicken soups, along with the chicken broth and chopped rotel tomatoes over the chicken layer.
  4. Add a layer of tortillas over the mixture.
  5. Sprinkle half of the chopped onion, green pepper, and grated cheese over the tortillas.
  6. Repeat the layers: chicken, seasonings, soups, vegetables, cheese, and tortillas.
  7. Cover the casserole with foil and bake for 30 minutes.
  8. Remove the foil and bake uncovered for an additional 15 minutes until bubbly and heated through.
