Chicken Caliente
A hearty, cheesy chicken casserole with bold flavors of chili, garlic, and vegetables, perfect for family dinners or casual gatherings with a comforting Tex-Mex twist.
Ingredients
- 3 pounds cooked chicken, boned ⓘ
- 1 teaspoon chili powder ⓘ
- 1/2 teaspoon garlic salt
- 1/2 large green pepper, chopped ⓘ
- 1 medium onion, chopped ⓘ
- 1 pound sharp cheddar cheese, grated ⓘ
- 1 can cream of mushroom soup ⓘ
- 1 can cream of chicken soup ⓘ
- 1 cup chicken broth ⓘ
- 1 can rotel tomatoes, drained and chopped ⓘ
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a 13 x 9-inch casserole dish, place a layer of half the cooked chicken, sprinkle with half the chili powder and garlic salt.
- Spread half of the cream of mushroom and cream of chicken soups, along with the chicken broth and chopped rotel tomatoes over the chicken layer.
- Add a layer of tortillas over the mixture.
- Sprinkle half of the chopped onion, green pepper, and grated cheese over the tortillas.
- Repeat the layers: chicken, seasonings, soups, vegetables, cheese, and tortillas.
- Cover the casserole with foil and bake for 30 minutes.
- Remove the foil and bake uncovered for an additional 15 minutes until bubbly and heated through.
