A crunchy, creamy chicken salad with potato chips and fresh vegetables, perfect for casual gatherings and served on crisp lettuce leaves for a satisfying meal.

Ingredients

  • 2 cups boiled chicken
  • 10 oz potato chips
  • 1 small bell pepper
  • 1/4 cup grated onion
  • 1/2 to 3/4 cup Miracle Whip
  • 1 head lettuce

Instructions

  1. Mix diced boiled chicken, diced bell pepper, and grated onion together.
  2. Let the mixture sit for approximately 5 minutes.
  3. Add 1/2 cup Miracle Whip to the mixture.
  4. Crush the potato chips and add them to the chicken mixture.
  5. Add remaining Miracle Whip; if the mixture is too stiff, add extra Miracle Whip until desired texture is achieved.
  6. Let the salad set for approximately 1 hour.
  7. Serve on a lettuce leaf.
