- Mix diced boiled chicken, diced bell pepper, and grated onion together.
- Let the mixture sit for approximately 5 minutes.
- Add 1/2 cup Miracle Whip to the mixture.
- Crush the potato chips and add them to the chicken mixture.
- Add remaining Miracle Whip; if the mixture is too stiff, add extra Miracle Whip until desired texture is achieved.
- Let the salad set for approximately 1 hour.
- Serve on a lettuce leaf.
