Ingredients

  • pan drippings (chicken, beef or pork)
  • self-rising flour
  • hot water
  • salt to taste
  • pepper to taste

Instructions

  1. After cooking your meat, pour off grease until just the bottom of the pan is covered.
  2. Add salt and pepper to the pan drippings.
  3. Stir in 2 to 3 heaping tablespoonfuls of self-rising flour.
  4. Cook, stirring constantly, until a nice brown roux is formed, just before scorching.
  5. Have hot water in a bowl ready. Pour about half of the hot water into the roux.
  6. The mixture will be thin.
  7. Cook over medium heat, constantly stirring, until the desired consistency is reached.
