Chicken Chipotle Corn Soup

Ingredients
- 3 cans chipotle chilies ⓘ
- 3 Tbsp. juice from cans of chilies ⓘ
- 1 1/2 qt. chicken broth ⓘ
- 1 large onion, chopped ⓘ
- 1 garlic clove, minced
- 1 tsp. cumin seeds ⓘ
- 12 oz. frozen corn
- 2 tomatoes, diced ⓘ
- 24.5 oz. shredded cooked chicken breasts ⓘ
- 4 Tbsp. fresh squeezed lime juice ⓘ
- 1/2 c. fresh cilantro
- 8 oz. cream cheese, diced ⓘ
Instructions
- In a 3-4 quart pan, cook onions and garlic in a little oil.
- Add chipotle chilies, cumin, frozen corn, and chicken broth.
- Bring to a boil, cover, and cook about 15 minutes.
- Stir in diced tomatoes and shredded cooked chicken, then bring to a boil again.
- Ladle soup into bowls and add lime juice, chopped cilantro, and cream cheese cubes.
