Ingredients

  • 5 chicken leg quarters
  • 1 (15 oz.) can chopped tomatoes
  • 1 large onion
  • 2 large potatoes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 chicken bouillon cube

Instructions

  1. In a 5-quart casserole, cook chicken with 5 cups water for 25 minutes on High.
  2. Remove chicken from bones and return to broth.
  3. Add chopped tomatoes, chopped onion, cubed potatoes, salt, pepper, and chicken bouillon cube.
  4. Cook for 30 minutes on High.
  5. Add corn and cook on Medium-Low for 10 to 15 minutes.
  6. Optional: Thicken broth with 1/4 cup flour mixed with a small amount of liquid or Wondra flour.
