Ingredients

  • 2 c. cooked chicken
  • 3/4 c. chopped celery
  • 3 Tbsp. parsley
  • 1/4 c. water
  • 1 Tbsp. Knox gelatin
  • 1 c. mayonnaise
  • 1/2 c. evaporated milk
  • 1/2 tsp. salt
  • 1 box raspberry jello
  • 1 c. hot water
  • 8 oz. can crushed pineapple

Instructions

  1. Blend mayonnaise, evaporated milk, and salt until smooth.
  2. Add cooked chicken, chopped celery, parsley, water, and Knox gelatin to the mixture and combine well.
  3. Spread this mixture on the bottom of a pan and chill until set.
  4. Prepare the cranberry jello by dissolving the raspberry jello in 1 cup hot water, then add crushed pineapple and half a cup of nuts.
  5. Chill the jello until it is slightly set.
  6. Pour the partially set jello over the chicken mixture and chill until fully set before serving.
