Ingredients

  • 1 young chicken
  • 4 Tbsp. butter
  • 1 small onion
  • 1 small carrot
  • 3 potatoes
  • salt and pepper to taste
  • a few mushrooms
  • 2 cups stock or water
  • 1 bay leaf
  • 3 Tbsp. sherry

Instructions

  1. Clean the chicken and cut it into convenient serving pieces.
  2. Melt the butter in a small frying pan, add the sliced onion and carrot, and cook until golden brown.
  3. Add the chicken pieces to the pan and cook until browned, then transfer them to the casserole.
  4. Pour the stock or water over the chicken and vegetables in the casserole.
  5. Add the bay leaf, cover closely, and simmer until nearly cooked.
  6. Add sliced potatoes, mushrooms, and season with salt and pepper.
  7. Cover and finish cooking until the vegetables are tender and the chicken is cooked through.
  8. Just before serving, add the sherry to the casserole.
