Chicken Enchiladas are a comforting Mexican dish that combines tender shredded chicken with creamy soups and melted cheese, all wrapped in soft flour tortillas. This flavorful casserole is perfect for family dinners or gatherings, bringing warmth and satisfaction to any table.

Ingredients

  • 4 cooked chicken breasts, shredded
  • 1 (8 oz.) sour cream
  • 1 (8 oz.) Cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 4 oz. sliced mushrooms
  • 1 small can diced chiles
  • 1 pkg. (20) flour tortillas
  • sliced green onions (optional)

Instructions

  1. Mix sour cream and both soups; add half of the cheese and sliced mushrooms, along with the diced chiles.
  2. Divide the soup mixture in half and mix with the shredded chicken.
  3. Fill the flour tortillas with the chicken mixture and roll them up. Place in a 9 x 13-inch pan.
  4. Pour the remaining soup mixture over the top of the tortillas and sprinkle with green onions and the remaining cheese.
  5. Bake for 30 minutes at 350°.
