  • 1 tsp. nutmeg
  • dash of paprika
  • 1 1/2 c. cooked chicken, diced fine
  • 24 tortillas
  • 4 c. vegetable oil

Instructions

  1. In a saucepan, melt the oleo and stir in the flour and salt.
  2. Add chicken broth and cook until thickened and bubbly.
  3. Cook for 1 minute more.
  4. Remove from heat and stir in lemon juice, parsley, grated onion, white pepper, nutmeg, and paprika.
  5. Stir in the cooked, diced chicken.
  6. Allow the mixture to cool slightly to soften the tortillas.
  7. Heat vegetable oil and dip each tortilla in hot oil for a few seconds until limp.
  8. Spread about 1 tablespoon of the chicken mixture over each tortilla.
  9. Roll up the tortillas tightly and secure each roll with a wooden toothpick.
