Ingredients

  • 4-6 boneless chicken breasts
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup shortening
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1 can cream of mushroom soup
  • 1 small jar pimentos
  • 3/4 cup water

Instructions

  1. Mix flour, salt, and pepper in a shallow dish.
  2. Coat the chicken breasts in the flour mixture.
  3. Heat shortening in a skillet over medium heat.
  4. Brown the coated chicken breasts in the skillet on both sides.
  5. Place the browned chicken in a baking dish.
  6. Add chopped celery and onion to the skillet and cook until tender.
  7. Stir in the cream of mushroom soup and small jar of pimentos.
  8. Add water and cook until the mixture is heated through.
  9. Pour the sauce over the chicken in the baking dish.
  10. Bake in a preheated oven at 350°F (175°C) for about 30 minutes or until the chicken is cooked through.
