Ingredients

  • 1/4 lb butter
  • 2 tsp salt
  • 3/4 tsp pepper
  • 3 cups chicken
  • 2 cups sifted flour
  • 6 eggs

Instructions

  1. Bring the butter, salt, pepper, and chicken broth to a boil in a saucepan.
  2. Add the sifted flour all at once to the boiled mixture, stirring constantly until the mixture leaves the sides of the pan.
  3. Remove from heat and cool for 3 to 5 minutes.
  4. Beat in eggs one at a time, beating until smooth and glossy after each addition.
  5. Mix in cooked chicken.
  6. Drop teaspoonfuls of the batter into hot fat and fry until golden brown.
  7. Drain on paper towels before serving.
