Ingredients

  • 3 whole chicken breasts, cooked and skinned
  • 15 1/4 oz. can pineapple chunks in unsweetened juice
  • 1 medium unpeeled apple
  • 1 cup seedless grapes, halved
  • 1/4 cup low-calorie salad dressing or mayonnaise
  • 1 1/2 cups light whipped topping
  • lettuce leaves
  • pecans or walnuts (optional)

Instructions

  1. Place chicken breasts in water and cook until done (about 15 to 20 minutes). Drain and remove from bone, then coarsely chop.
  2. Drain pineapple chunks, reserving the juice.
  3. Peel and coarsely chop the apple, then dip in pineapple juice to prevent browning.
  4. Combine chopped chicken, pineapple, apple, grapes, salad dressing, and whipped topping in a bowl.
  5. Chill the mixture for 2 hours.
  6. Serve on lettuce leaves, optionally garnished with pecans or walnuts.
