Ingredients

  • 6 chicken breasts
  • 1/2 onion
  • 1 cup celery
  • 1 package frozen okra
  • 2 cans stewed tomatoes
  • chicken bouillon (instant)
  • salt
  • pepper

Instructions

  1. Remove the chicken meat from the bones and set the broth aside in the refrigerator to let the fat separate.
  2. Skim the fat from the chilled broth and pour it into a large kettle.
  3. Bring the broth to a boil and add the chopped onion, chopped celery, and frozen okra.
  4. Cook until the vegetables are barely tender.
  5. Add the stewed tomatoes and the cooked chicken, cut into pieces.
  6. Season with chicken bouillon, salt, and pepper to taste.
  7. Add the instant rice and cook until the rice is tender and the soup is heated through.
