Ingredients

  • 12 slices toasted bread or 2 boxes Brownberry seasoned croutons
  • 4 cups diced cooked chicken
  • 1 cup mayonnaise
  • 4 eggs
  • 3 cups milk
  • 1/2 cup chopped green pepper
  • 1 medium onion chopped
  • 1 cup chopped celery
  • 1/2 jar pimiento chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup grated cheese

Instructions

  1. If not using croutons, trim, butter, and cube slices of toast. Put half of bread cubes on the bottom of a buttered 9 x 13-inch pan.
  2. Sauté green pepper, onion, celery, and pimiento; mix with mayonnaise and cooked chicken.
  3. Spread the mixture over the bread cubes; then cover with remaining cubes.
  4. Beat eggs and milk together and pour over the casserole.
  5. Refrigerate overnight.
  6. Bake for 1 hour at 350°F.
  7. Remove from oven; spread cream of chicken and mushroom soups over the casserole.
  8. Sprinkle grated cheese on top.
  9. Return to oven and bake for 30 more minutes.
  10. Let stand for 10 minutes before cutting into squares.
