Chicken La Gumbo

Ingredients

  • 1 whole chicken, boiled and deboned
  • 1 1/2 tsp gumbo file
  • 8 slices bacon
  • smoked sausage
  • 1/2 cup onion, chopped
  • 2 tsp garlic powder
  • 3 Tbsp flour
  • 1 can stewed tomatoes

Instructions

  1. Fry bacon until crispy, then remove and crumble.
  2. In bacon grease, sauté chopped onions and garlic until translucent.
  3. Add flour and gumbo file, then brown the mixture.
  4. Pour in chicken broth, then add the cooked bacon, sliced sausage, and deboned chicken.
  5. Simmer for 30 minutes.
  6. Add canned stewed tomatoes and cook for another 30 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the gumbo over cooked rice.
