Ingredients

  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 2 large cloves garlic, minced
  • 1/4 cup butter, melted
  • 4 2/3 cups chicken broth
  • 2 cups brown rice or white rice, uncooked
  • 3/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup chopped carrots

Instructions

  1. Saute celery, onion, and garlic in melted butter in a Dutch oven.
  2. Add chicken broth, rice, salt, and white pepper to the pot.
  3. Cover and cook over low heat for 40 minutes.
  4. Stir in chopped carrots and cook for an additional 10 minutes.
